I love food made with Zucchini. It is the best and you cannot always taste the veggies which is another plus. Nothing feels more like summer than when you start cooking with zucchini from the garden.
I don’t shred zucchini. I prefer to keep peeling the zucchini after I peel off the skin.
Here is the recipe we used:
2 Hand fulls of peeled zucchini (about 2ish cups)
3/4 cup white sugar
1/2 cup vegetable oil
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
2 tablespoons of cinnamon
Preheat oven to 350 degrees F
Flour or grease your loaf pan.
In a bowl, beat together the zucchini, sugar, egg, and oil.
Slowly add the flour, salt, baking soda, and the cinnamon.
Mix the flour mixture into the zucchini mixture just until blended.
Pour the batter into the loaf pan. Bake 30-45 minutes.
If you want to turn out the bread from the pan let it cool for 15-20 minutes. Otherwise serve warm with some butter.
