Cinnamon Almonds

Almonds are a powerhouse food, and if you haven’t noticed by reading my blogs I LOVE cinnamon, which is not a bad thing because cinnamon is super good for you. Plus, which four kids and life I need powerhouse foods. Cinnamon isn’t bad for you until the sugar comes into play. Another thing you must have found out by following me, I have a terrible sweet tooth and LOVE sugar. Take the good with the bad :). I love seeing the variation comments in my recipes. They are great ideas and sometimes I try them. Though please remember, if your suggestion is less sugar I may just not try it :p but I am glad my cooking can provide experiments for you!

Almonds are good for energy boosting, protein, and they help with your milk supply if you nursing, which I always am. If your a pregnant mama these are easy to eat, the baby will love them, and they are normally easy to keep down if you are not feeling well.

Ingredients

1 egg white

1 teaspoon water

4 cups whole almonds

1/2 cup white sugar

1/4 teaspoon salt

1 tablespoon ground cinnamon

Directions

Preheat oven to 250 degrees F

Grease your pan or line with paper or foil. I prefer greasing, I use coconut oil and like the extra flavor.

Beat the egg white and water until frothy do this by hand.

Add the almonds, and stir until well all look coated.

Mix the sugar, salt, and cinnamon, and sprinkle over the nuts. Toss to coat all the almonds.

Spread evenly in the pan.

Bake for 1 hour and flip nuts as needed to prevent getting stuck or burning.

Take out when almonds are golden.

Allow to cool and enjoy them. Store them in a baggie or container with a lid if you are not going to eat them.

I am sure this same recipe would work with any nut or mixed nuts. All I had on hand were Almonds and it was so yummy I was ready to share after I made it.
