It’s fall time and getting closer and closer to the Christmas season. Cinnamon just makes me think of fall and winter. I add cinnamon and vanilla to everything, even my coffee. So it is no surprise that I have changed MANY recipes to include more vanilla and cinnamon flavors. This is my variation of Vanilla and Cinnamon cookies.
3 tablespoon cinnamon
1 cup brown sugar
1/2 cup white sugar
1 cup butter, softened
2 tablespoons vanilla extract
2 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
Cinnamon/Sugar in a shaker (no measurement for this)
Preheat oven to 300 degrees F
Grease or flour baking sheet.
Mix brown sugar, butter, cinnamon, and sugar in a large bowl until grainy, it’ll be easier if you can use a mixer. If you can’t use a mixer use a wooden spoon or metal whisk.
Add eggs and vanilla extract, mixing until fluffy.
Add in flour in 1/2 cup at a time while mixing.
Add baking soda and salt and mix again.
Roll dough into balls and flatten in crisscross pattern with a fork on baking sheet
Shake cinnamon/sugar to taste on top of cookies.
Bake for 18 to 20 minutes.
Enjoy! These will be very good and if you take them out in time soft and very good with some ice cream.
